We are having a small wedding my question is my matron of honor if she backs out a few days before what should I do and what do I do with the flowers

Answer:

If she backs out a few days before the wedding, it's completely okay. You don't have to have a matron of honor, whether or not you have bridesmaids! If she does back out, just use her bouquet as decor, such as placing them by the guest book, or on the table where you're displaying family photos and other personal decor. Or, you can use it as the 'giveaway bouquet' instead of tossing or presenting your bouquet to a lucky lady during the reception.
