Hi,
For booklet style you need at least a 32lb stock for the cover and then use bond paper for the insert. If you do a one sheet where you print on both sides then I recommend a 16lb stock. Best way to fold is to "fold" ever so gently without making an indentation. Even all edges and then start creasing hard, from the middle. Not too slow, not too fast.

I made my own on heavy textured card stock. We did two programs on a single sheet of 8.5 x 11 (length-wise) using the front and back of the paper. I made the programs in publisher or word. My colors were b&w, so I didn't have to worry about matching to my invitation ink or anything. It was super-easy and we dropped the file off at the local print shop and they printed, cut, and delivered to us. Don't make too many - I still have a hundred left over!
